What are some lighter Italian entrees to go with Eggplant Parmesan?

I would marinate the chicken filets in some olive oil, white wine, garlic, parsley, basil and S/P. Then take each fillet, line it with either a piece of the country ham or a slice of bacon, roll it and secure with toothpicks. Then bake at 375 degrees for about 25-30 minutes.
